What a wonderful visit and lunch with Grandma at Golden Corral

First time using our new air popper! AMAZING!!!!! It made a gigantic amount in about 3 minutes! It all pops too. Perfect treat for our new lifestyle.

Going in the oven!! Black bean quinoa veggie burgers!! We had one earlier. Delish!! (Muffins are for baby Zee when he comes over. His fave!)

Here is my finished vegan ‘meatloaf’ which is really called quinoa loaf. It was surprisingly very good!! Greg and Paulette both loved it! I decided I’m going to use this recipe with spice variations for things like veggie burgers or meatballs for spaghetti or stroganoff. It’s a lotta work but oh so worth it!!

My first all vegan ‘meatloaf’ ready to go in the oven after the meeting today! The mixture tastes delicious! (You can taste it bcuz there’s no raw meat or egg in it!) I’ll post a pic after it’s cooked!! Yum!
